Because the strategic position, regarding sea and mountain, Altamura is characterized by a particular weather, togheter with a good ventilation with dry summer and rigid winter; These conditions that determine the alternation of two seasons, spring and autumn, favourable to the cultivation of durum wheat: wheat by exceptional and special chemical-physical features.
Durum wheat is worked by local mills through a special method of milling.
